I just wanted to share something I have recently found.  I HATE those stupid skillet meals that you can buy in the freezer section (well, FIND in the freezer section, BUY at checkout, lol) I always screw them up.  But the other day, I found something right next to them for the OVEN!!

 

They are made by Bertolli the spaghetti sauce people... anyway, I got two bags because one only feeds 2 people.  I didn't know if it would cook right using two bags, but so far I have made 2 this way and it worked perfectly... I am thinking about it now because I am about to put one in the oven.

 

Anyway, I combined the 2 bags in a 13 X 9 inch dish and used the same cooking instructions listed for one bag.  The batch I am about to put in the oven will be the 3rd variety we have tried.  They have all had the exact same instructions (which is GREAT for me 400 degrees for 45 minutes covered, take out stir sauce add cheese, cook uncovered for 5 min) AND, best of all, they have all been a big hit with the kids and my husband!  I add a can of green beans or corn and I have a meat, starch (pasta) and veggie!  I guess dairy too if you want to count cheese.

 

Just wanted to share because even though it takes 45 minutes to cook, I don't have to mess with it much which is a huge plus for me.

 

Oh, also a breakfast thing.... I was reading that kids with ADHD need a really good breakfast but I have to get my kids up so early as it is, they usually don't want to eat much.  THe only one who does not get a second chance for breakfast is my 5 year old, so this weekend at the grocery store I bought some carnation instant stuff to add to her milk.  I know that still isn't great, but at least she is getting more vitamins and nutrition from that since breakfast for her is usually a waffle or cereal.  She likes it so far because she thinks it is chocolate milk!

a number of years ago, my mother bought me a cook book. every recipe has only 4 ingredients. simple, easy, quick (for the most part). she also got a crock pot cook book for me at the same time. I've used that one a number of times. but to have a recipe with only 4 ingredients - wow! that was truly a lifesaver!

I have almost picked up one of those books a few times. Not sure why I never do. I don't do well with crock pots though. I buy the stuff to put in them, but can never remember to set it up in the morning. I usually end up using it on the weekend which is the time I can actually spend time cooking, lol. Kind of the opposite of what it is for.

My son, who is now 30, had a poor appetite as a kid. He had ADHD and was on Ritalin. I used to give him chocolate Ovaltine in the morning and he loved it. If you look on the can it has lots of vitamins and minerals added, but he just liked the taste.

The best breakfast for me so far has been protein and caffeine. I found a plastic microwave egg poacher, and it takes 1 minute for 1 egg. I put a piece of bread in the toaster and an egg in the microwave, and grab coffee on the way out the door and it makes a huge difference in my mood and energy level. My 2nd favorite is sausage balls..crumble and brown one package of sausage, drain. Get 2 cups Bisquick and 2 cups finely shredded cheddar, and stir them in with the sausage (it will be doughy). Next, roll them up into balls and cook them in the oven at...I think maybe 325 for about 15 minutes. They will dry up if you overcook, though, and since I'm a "feel it" kind of cooker, I don't have the exact time...but you can cook them up the night before, and they microwave really good. I make them about golf ball size, and 2 of them is good protein for the day. It is a lot of fat, but it's better than not eating. Pair it with some good orange juice and a cup of coffee! Yum...now I'm hungry!

Those sausage things sound really good! I have been looking for a microwave egg poacher, I have a stove top one, but I have messed them up a couple of times by not setting the timer right, etc.

Do you take any stimulants for your adhd? I was just wondering if you did how you felt with caffiene too. I have been scared to try any extra stimulant on top of the ritalin.
